Asparagus salad with mango

Description
Surely you have a couple like that in your circle of friends: both are totally different and yet (or perhaps because of that) they are a perfect match. That's also the case with asparagus and mango. Here you can find a delicious vegan recipe with the mismatched pair. A few strawberries are also allowed in the mix. It's a light summer salad that makes you want more.

For the salad

asparagus spears, white

mango

fruity vinegar

honey

lettuce hearts
salt, pepper, chili to taste
Preparation
Prepare the salad

Blanch the asparagus spears in boiling salted water (ideally in asparagus stock) for about 3 minutes. Then remove from the water (stock) and leave to cool.

Peel half a mango and cut into thin strips. Puree the strawberries with the vinegar, honey, chilli and a pinch of salt in a multi chopper.

Wash and dry the lettuce and cut or pluck into fine strips.

Roast the asparagus in a grill pan or on the grill until it takes on some colour. Then serve with the lettuce and mango and garnish with the strawberry puree.

Tip: This salad is vegan. However, it can be extended very well, for example with crispy bacon and much more.
