Chickpeas put you in a good mood! And it's by no means just the name that plays a big role. The taste and the many nutrients of the small legumes also put a smile on your face. And when they come embedded in delicious ingredients such as peppers, tomatoes, Parmesan cheese and a dressing, then the pleasure is a real joy.

For the salad

480 g chickpeas, cooked
0.5 pepper, yellow
0.5 pepper, red
0.5 onion, red
12 cherry tomatoes
4 Tablespoon(s) olive oil
1 Tablespoon(s) balsamic vinegar
1 Teaspoon(s) mustard
1 Tablespoon(s) honey
30 g parmesan, grated
2 Tablespoon(s) water
5 Stem(s) parsley
salt, pepper, cayenne pepper, cumin to taste

Preparation

Prepare the salad

Mix olive oil, balsamic vinegar, mustard, honey and water with spices to taste in a dressing shaker.

Chop the peppers, onions and tomatoes. Finely chop the parsley. Grate the parmesan.

Mix the cooked chickpeas with the chopped vegetables, parsley, Parmesan and dressing and leave to stand for a while. Then serve.
