Preparation
Prepare the crust

Preheat the oven to 170°C (top and bottom heat).

Finely crumble the butter cookies and melt the butter.

Mix the cookie crumbs, butter, and salt together well, then spread the mixture evenly over the bottom of the pan and press down firmly to form an even crust.

Bake the crust in the preheated oven for 15 minutes, then let it cool slightly for a few minutes.

While the crust is in the oven, carefully mix all the ingredients together until smooth. Be sure to incorporate as little air as possible into the mixture.

Let the mixture rest for a moment, then tap the bowl containing the mixture lightly on the counter several times to allow any remaining air bubbles to rise.

Now pour the mixture through a sieve onto the baked cookie crust and remove any remaining bubbles. Bring about 2 liters of water to a boil.

Wrap the bottom of the springform pan with aluminum foil to a height of about three to four centimeters so that the pan is as well-protected from water as possible, then place it on the baking sheet/oven tray.

Pour the boiling water onto the baking sheet so that the pan is standing a few centimeters in the water and can still be easily moved in and out of the oven.

Bake the cake in this water bath for 45 minutes.

Let the cake cool completely, then decorate as desired or serve plain.
