150 g wheat flour
80 g almonds, ground
100 g butter, cold
80 g sugar
1 egg yolk
40 ml milk
15 ml rum (or milk)

Bake the pastry

Preheat the oven to 180°C convection oven. Mix all the ingredients into a smooth dough. The consistency should be creamy but not sticky to the hands (similar to a soft shortcrust pastry).

Fill the tube of the pastry press with dough and screw on the desired attachment.

Position the pastry press upright on a clean baking tray without baking paper. Then press the pump lever - for some templates you should press once, for others twice. Make sure that the lever is pressed completely up and down.

Bake the tray with the biscuits for 12 minutes, depending on how brown you want them. After baking, remove directly from the tray and leave to cool.

IMPORTANT: The consistency of the dough is important. It may be necessary to add a little milk or flour to the dough so that it sticks well to the tray and can be easily processed with the pastry press.
