Preparation
Prepare the red cabbage

If not already prepared: Cut the red cabbage, onions and apple into fine strips or pieces.

Melt the oil in a large saucepan and sauté the onions until translucent.

Add the sugar and cinnamon stick and allow everything to caramelise slightly.

Deglaze with mulled wine and allow to reduce slightly.

Add the red cabbage and fill up with apple juice. Add the apple, lemon juice, balsamic vinegar, maple syrup, cranberry jelly, orange zest, salt and pepper to the pot and stir everything together.
Place the bay leaves, juniper berries, cloves and star anise in a cloth/tea strainer/... seal and add to the mixture.

Cover and simmer for approx. 90 minutes. Stir regularly.

When the red cabbage has reached the desired consistency, season to taste with salt, pepper and maple syrup if desired, remove the cloth/tea strainer/... with the spices, then thicken the red cabbage or stock with starch and mix well.
