You don't want to make your classic potato salad again and want to shine with a highlight today? Then try this glass noodle salad! Great spices, aromatic peanuts and fresh herbs give the rather neutral-tasting glass noodles a real kick. Just like the barbecue - it's the perfect accompaniment!

For the salad

100 g glass noodles
0.5 pepper, yellow
0.5 pepper, red
0.5 red onion
50 g peanuts, roasted
50 g fried onions
50 g champignons
50 g carrot
10 g ginger
10 g garlic
10 g chili
1 spring onion
1 lime
1 Tablespoon(s) brown sugar
1 Tablespoon(s) teriyaki sauce
1 Tablespoon(s) rice vinegar
1 Tablespoon(s) sweet chili sauce
2 Tablespoon(s) soy sauce
2 Tablespoon(s) vegetable stock
3 Stem(s) mint, fresh
3 Stem(s) coriander, fresh
tofu, minced meat, prawns,... to taste (optional)

Prepare the salad

Cook the glass noodles according to the instructions and leave to cool.

Finely chop the onions, ginger, garlic and chilli and sauté lightly in a saucepan. Add the brown sugar and deglaze with the juice of one lime. Remove from the heat and add teriyaki sauce, soy sauce, rice vinegar, stock and sweet chilli sauce and stir until smooth.

Finely chop the peppers and mushrooms, chop the herbs, coarsely grate the carrot and mix with the peanuts, fried onions, the glass noodles and the marinade as well as the zest of a lime and leave to infuse for a while. Finely chop the spring onions and sprinkle over the salad before serving.

If you like, you can add some fried minced meat, tofu or other things to the salad.
