Description
"I'll have the gnoschis!" The Italian waiter looks a little puzzled until he realises that the guest wants to order "NJOKI". The pronunciation is already a bit of a challenge. Making the little potato dumplings yourself, on the other hand, is not. The basic recipe only requires a few ingredients and a few steps. They are quickly made and ready to be turned into delicious dishes of Italian cuisine.

durum wheat semolina

Preparation
Prepare the gnocchis

Boil the potatoes in their skins in sufficiently salted water.

After cooking, allow the potatoes to steam briefly, peel and mash while still warm.

Add the flour, semolina, salt and nutmeg (and any other ingredients such as herbs or similar) and knead everything into a smooth dough.

Form the potato dough into a roll about the thickness of a finger and cut it into pieces about 2-3 cm long.

Carefully unroll each piece and, if necessary, press in the typical pattern with the back of a fork.

The finished gnocchi can now be boiled in salted water or fried in a pan with a little fat.
