Description
Mac'n'cheese is probably one of the classics when it comes to American side dishes. Whether served with a burger, BBQ or a roast, the cheesy noodles are almost always perfect. Creamy on the inside, crispy on the outside - you don't really need to say much more, as the noodles speak for themselves!

Preparation
Prepare the Mac'n'Cheese

Preheat the oven to 160°C fan. Bring the pasta water to the boil. Grate all the cheese, if not already done.

Add the pasta to the water and cook until still relatively al dente. Meanwhile, prepare the sauce.

Heat the butter in a pan and add the flour as soon as the butter foams. Briefly toast the flour in the butter and then add the milk and cream.

Flavour with salt, pepper, mustard, maple syrup, apple cider vinegar and smoked paprika powder and bring to the boil once to thicken the sauce. At the moment, the sauce still tastes relatively smoky, but in combination with the cheese and pasta this balances out.

Drain the finished pasta and mix with the grated cheese and hot sauce while still hot.

Then transfer the pasta mixture to the Terra Nova casserole dish, smooth it out a little and then prepare the topping.
Finish the Mac'n'Cheese

Roughly chop the garlic clove and place in a hot pan with the breadcrumbs and butter. Fry everything for a few minutes until the breadcrumbs are golden brown.

Spread the topping evenly over the cheese noodles and gratinate in the oven for 30 minutes.
