What a coincidence - this description fits our delicious mini quiches exactly. They are quick to make and come out of the oven smelling delicious in no time at all. Your guests will be thrilled!

Ingredients for

For the dough

120 g butter, cold
300 g wheat flour
1 egg yolk
0.5 Teaspoon(s) salt
1 Pinch(es) sugar

For the filling

125 g diced ham
2 spring leek
1 onion
1 egg, size L
60 ml cream
60 ml milk
60 g cheese, grated
salt, pepper, nutmeg to taste

Preparation

Bake the dough

Cut cold butter into cubes and knead quickly with flour, egg yolk, salt and sugar to a smooth dough. Chill for 30 minutes

Preheat the oven to 180°C convection oven.

Roll out the shortcrust pastry thinly and line the moulds with it. Place baking paper on the dough and weigh down with baking peas or similar and bake for 15 minutes.

Prepare the filling

Fry the bacon cubes. Finely dice the onion and fry. After a few minutes, drain in a sieve.

Remove the baking paper and baking peas. Finely chop the spring leeks and divide between the tartlets together with the bacon and onions.

Set the oven to 160 °C convection oven.

Whisk together the milk, cream, cheese and egg, season with salt, pepper and nutmeg and divide the mixture between the tartlet cases.

Bake for 30 minutes or until browned.
