Hearty, filling and wonderfully versatile: okonomiyaki is a popular Japanese street food classic that is often described as a ‘Japanese pancake’. The name literally means ‘grill what you like’ – and that is precisely what makes this dish so appealing. A light batter is combined with plenty of finely chopped cabbage and other ingredients to taste and fried in a pan until golden brown. Whether with meat, seafood or vegetarian – okonomiyaki can be varied to suit individual tastes. Typical accompaniments include spicy okonomiyaki sauce, a little mayonnaise and aromatic toppings, which give the dish its distinctive character. It's an uncomplicated, comforting dish that's perfect for sharing.

Ingredients for the okonomiyaki

300 g chinese cabbage
100 g flour
1 egg
100 ml water
30 g carrot
2 spring onion
50 ml okonomi sauce
50 ml mayonnaise
salt, sugar

Preparation

Cut the Chinese cabbage and carrot into very fine strips and the spring onion into fine rings.

Make a smooth batter from the flour, egg, water, a little salt and sugar.

Set aside a small amount of the carrot and spring onion and mix the rest together with the Chinese cabbage and batter.

Now add a little oil to a preheated pan and pour a portion of the okonomiyaki batter into the pan.

Fry for about 3-4 minutes on one side until golden brown, then turn and fry on the other side for a few minutes until golden brown.

Meanwhile, spread the okonomiyaki sauce on top of the Japanese pancake.

Remove the finished okonomiyaki from the pan, garnish with a little more okonomiyaki sauce and mayonnaise if desired, and sprinkle the remaining carrot and spring onion on top.

Tip: Other ingredients such as minced meat or prawns, other vegetables or spices can also be added to the okonomiyaki batter. The toppings can also be expanded.
