Orange fennel salad

Description
Fennel and oranges are a great combination! The flesh of the orange is cut into small pieces and brings a juicy sweetness to the salad. An interesting contrast to the fennel, which tastes slightly of aniseed. The salad is served with some fennel greens and can be served with a variety of dishes or as a starter.

For the salad

1 fennel
2 oranges
3 Tablespoon(s) olive oil
1 Pinch(es) salt
1 Teaspoon(s) brown sugar
pepper, chili to taste

Prepare the salad

Peel half of the oranges with an orange peeler and cut the flesh into small pieces.

Remove the fennel greens and then cut into strips with a drum grater.

Grate the zest from the second half of the oranges and then squeeze.

Mix the fennel and orange and season with the orange zest and juice, olive oil and a little salt, pepper and sugar. Then leave to marinate for 30 minutes.

Mix everything together again, garnish with fennel greens and serve.
