Description
Apple and red cabbage is one of those traditional side dishes that immediately evokes a feeling of warmth and comfort. The aroma of gently braised cabbage combined with the natural sweetness of fresh apples is reminiscent of winter family dinners and festive tables. What makes this dish so special is the harmonious balance of savoury and fruity flavours, rounded off with spices such as cloves, bay leaves and a hint of cinnamon. Despite its classic character, apple red cabbage can be varied in many ways – sometimes with a dash of red wine, sometimes with a little vinegar for extra freshness. This makes apple red cabbage a timeless accompaniment to many favourite dishes.

Prepare the red cabbage
1
If not already prepared: Cut the red cabbage, onions and apple into fine strips or pieces.
2
Melt the oil in a large saucepan and sauté the onions until translucent.
3
Add the sugar and cinnamon stick and allow everything to caramelise slightly.
Place the bay leaves, juniper berries and cloves in a cloth/tea strainer/... seal and add to the pan.
4
Deglaze with port wine and allow to reduce slightly.
5
Add the red cabbage and fill up with apple juice. Add the apple, lemon juice, balsamic vinegar, maple syrup, cranberry jelly, vanilla, salt and pepper to the pot and stir everything together.
6
Cover and simmer for approx. 90 minutes. Stir regularly.
7
When the red cabbage has reached the desired consistency, season with salt, pepper and maple syrup if desired, remove the cloth/tea strainer/... with the spices, then thicken the red cabbage or stock with starch and mix well.
Note: As the amount of liquid can vary slightly, the amount of starch should be adjusted accordingly. You may need to use a little less or a little more.
