Red velvet cake

Description
Red Velvet means "red velvet". And when you look at this gorgeous pastry, it really does look tempting! Its cream of mascarpone and strawberries is a dream! The red food colouring in the pastry baked as a heart shape make this a lovely cake that goes so beautifully with special occasions.

For the dough

180 g sugar
2 eggs
1 Pack(s) vanilla sugar
1 Teaspoon(s) food colouring, red
200 ml oil
190 ml buttermilk
210 g wheat flour
1 Tablespoon(s) cocoa powder
1 Pinch(es) salt
1 Teaspoon(s) bicarbonate of soda
1 Teaspoon(s) baking powder

For the filling/decoration

250 g mascarpone
50 g icing sugar
100 g strawberries

Preparation

Bake the cake

Preheat the oven to 180°C top/bottom heat. Beat the eggs, sugar and vanilla sugar until frothy. Add the food colouring.

Mix the oil and buttermilk together and mix the flour, cocoa powder, baking soda, salt and baking powder in a second bowl.

Alternate mixing the buttermilk/oil mixture and dry ingredients into the egg mixture.

Pour into the tin and bake for 45 minutes. Test with a chopstick if necessary.

Turn cake out of the tin and leave to cool, then cut in half horizontally.

Prepare the filling and decoration

Wash and destem the strawberries. Cut some of the strawberries into thin slices. Cut the rest into small cubes and mix with the mascarpone and icing sugar.

Spread the cream on the inside of the cake and garnish the top of the cake with the strawberry slices.
