Unlike Mexican salsa verde, which is based on green tomatoes and chilli, this version thrives on a mixture of fresh herbs, olive oil and a subtle acidity. The result is an intensely green, fragrant sauce that goes wonderfully with fish, meat, potatoes or roasted vegetables. It brings freshness and depth to the plate without overpowering a dish. 60 g parsley
30 g basil
2 Sprig(s) mint
170 ml olive oil
2 garlic cloves
40 g coarse mustard
30 g capers
20 ml apple cider vinegar
0.5 lemon (zest only)
salt, pepper

Prepare the salsa verde

Place all ingredients in a blender or gradually add them to a food processor and purée.

Season the salsa with salt and pepper to taste and allow to stand for at least one hour before serving.
