Unlike Mexican salsa verde, which is based on green tomatoes and chilli, this version thrives on a mixture of fresh herbs, olive oil and a subtle acidity. Preparation
Prepare the salsa verde

Place all ingredients in a blender or gradually add them to a food processor and purée.

Season the salsa with salt and pepper to taste and allow to stand for at least one hour before serving.
