Now it's getting British. We've cooked our best shepherd's pie for you here - an absolute classic of English cuisine, which, put very simply, is a meat stew topped with mashed potatoes. We tried a few variations and ended up finding this recipe the best. It may no longer be the classic version, but it's damn tasty!

Ingredients for

For the shepherd's pie

500 g potatoes, floury cooking
100 ml milk
100 g butter
75 g cheddar, grated
300 g lamb neck, without bone
200 g minced beef
100 g onion
75 g carrot
75 g peas
1 garlic clove
5 Sprig(s) thyme
50 g tomato paste
400 ml beef stock
1 Tablespoon(s) mustard, coarse
2 Tablespoon(s) worchestershire sauce
0.5 Teaspoon(s) Tabasco
salt, pepper, paprika powder

Prepare the shepherd's pie

Peel the potatoes and boil in plenty of salted water.

Cut the lamb neck into hazelnut-sized pieces (or smaller). Peel and finely chop the onions, carrots and garlic.

Sear the lamb in a pan and then remove from the pan.

Fry the mince in the same pan and then add the lamb, onions, carrots, garlic and thyme.

Sauté everything briefly and then add the tomato purée. Fry briefly and then top up with the beef stock.

When the liquid has almost completely boiled away, add the peas and season everything with Worchestershire sauce, Tabasco, salt, pepper and paprika powder. Preheat the oven to 200°C top/bottom heat.

Drain the potatoes and heat the butter with the milk. Press/mash the potatoes and mix with the warm milk and butter mixture to make mashed potatoes.

Season the mashed potatoes to taste and work a little more than half of the grated cheddar into the mashed potatoes.

Spread the meat ragout evenly in a Terra Nova casserole dish and spread the mashed potatoes on top. Finally, spread the remaining cheese on top and bake in the preheated oven for about 20 minutes.
