Preparation
Prepare the salad

Cut the bread/rolls into large cubes. Cut the tomatoes into cubes with a dicer/peeler. Wash and dry the rocket.

Lightly toast the bread cubes in a pan together with the garlic and rosemary needles.

Mix the toasted bread cubes, diced tomatoes and rocket in a bowl with olive oil, balsamic vinegar, salt, pepper and lemon zest and juice.

Tip: You can use different types of bread, add seeds or nuts or combine the salad with some meat or cheese/mozzarella. The possibilities are endless and the salad is perfect for using up small leftovers (nuts, seeds, salads, vegetables, etc.).
