Description
The main ingredient of this vegan sausage is spinach. Sautéed with onions and garlic, it creates a nice sweet and savoury flavour. So, a perfect filling to make your sausages taste really delicious. Preparation
Prepare the vegan sausage

Sweat the onions and garlic with half the oil. Add the spinach.

Finish cooking the spinach and season with salt, pepper, nutmeg and chilli. Then chop or puree as finely as possible.

Knead the seitan base, water, the remaining oil and spinach into a rough dough.

Weigh out 50g portions, roughly shape into sausages and place in the mould.

Steam the closed moulds in the steamer/pot for 40 minutes.

Leave to cool briefly and then fry over a medium heat if necessary.
