Pancakes in themselves are already very good for children. But in squeaky green they are an absolute hit. The great thing is that the colour comes from the vegetables, but the taste isn't much different. And the additional time required is also minimal. Sounds like a child-culinary win-win-win situation! 60 g spinach, fresh
200 ml oat milk
130 g spelt flour
1 egg
spices, to taste

Prepare the pan cakes

Wash the spinach and then place in a blender jug with the oat milk. Puree both until the liquid is an intense green colour.

Now add the flour and egg (and spices of your choice if desired) and mix everything into a homogeneous batter.

Preheat a non-stick frying pan, lightly grease if necessary and then pour the pancake batter into the pan, depending on the desired size of the pancakes.

As soon as the batter is completely matt on the top (the batter is still shiny when raw), flip the pancake, remove from the pan after a few seconds and do the same with the rest of the batter.

Tip: The pancakes can be eaten plain or spread with cream cheese, for example, and rolled up. There are no limits to your imagination here.
