Ingredients for six rolls
- flour (type 550)
- fresh yeast
- 1 tsp
- 1 tbsp
- baking malt
Prepare a pre-dough with some of the flour, water and the yeast and let it rise for 5-10 minutes.
Add the remaining ingredients to the pre-dough and knead everything into a smooth dough. Cover and leave to rest for about 30 minutes.
Carefully shape the dough and divide into six equal pieces. Form dough pieces from the pieces (roll carefully, little/no kneading). Cover the dough pieces and let them rest for another 30 minutes. Preheat the oven.
Coat the dough pieces with water and score them. Then bake at 200° C convection oven for 10-15 minutes.
