Chai Seashells

approx. 60-minutes incl. proving and baking time

Ingredients for 9 seashells using a Madeleine tray:

For the dough:

60 ml
peanut oil
75 g
fine sugar
140 g
1 tsp.
baking powder
1/2 tsp.
1/2 tsp.
1 pinch
1 pinch
200 g
apple sauce

For the spicy oriental cream filling:

4 sachets
chai tea
200 g
250 g
butter or margarine

Schritt für Schritt - Anleitung

Step 1:

Blend together oil and sugar in a mixing bowl. Mix the flour, baking powder and spices and stir it into the oil/sugar mixture. Add the apple sauce to the blended mixture. Distribute the mixture among your Madeleine tins and bake them in the oven until they are golden brown. Baking time: 12 minutes temperature: 190 -C

Step 2:

Let the shells cool in their moulds for 5-7 minutes. Then simply take the finished shells out of their moulds and let them cool on a wire rack for a further 5 minutes.

Step 3:

For the filling, pour 200 ml of boiling water over the teabags and let them soak for 15 minutes. Take out the bags and stir in the sugar. Bring the mixture to a boil and let it simmer for approx. 8 minutes until a syrup forms. Let the syrup cool down a bit and then stir in the butter until it dissolves completely. Let the finished mixture cool down in the fridge.

Step 4:

Cut open the shells and fill a piping bag with the cream, then cover the lower halves of the shells. Place the top halves over them and press down gently.
