Ingredients for cinnamon bread

420 g
wheat flour (type 550)
60 g
mashed potato flakes
21 g
fresh yeast
1 pinch
salt

soft butter
250 ml
warm milk

Schritt für Schritt - Anleitung

Step 1:

Add all the ingredients for the dough into your mixing bowl and use a hand mixer with a dough hook attachment to mix it into a smooth dough.

Step 2:

Let the dough prove in a warm place (+/- 30-) for an hour until it has doubled in size. 

Step 3:

Roll the dough out onto a greased work surface (approx. 25 x 50 cm).

Step 4:

Mix the egg in a cup with the water and brush the rolled out dough with half of the egg/water mixture.

Step 5:

In a separate cup, add your cane sugar, cinnamon and flour for the filling, then completely cover the dough with this and roll the dough up tightly from the short side.

Step 6:

Place the roll of dough into the loaf pan with the seam facing downward, cover it and let it prove for an hour.

 

Step 7:

Bake the dough for 45 minutes in the loaf pan on the bottom of your preheated oven set to 180 - top and bottom heat.

Tip:

If the bread gets too dark, then simply cover the baking mould with aluminium foil halfway through baking!
