Schritt für Schritt - Anleitung

Step 1

Knead flour, butter, egg yolk, salt and sugar to a dough and store it in a cool place for 30 minutes. Preheat the oven.

Step 2

Sweat the diced ham in a pan, cut the onions in fine cubes and put them into the pan. After some minutes drain everything into a sieve.

Step 3

Roll out the dough thinly and put it into the quiche form. Put some baking parchment on the dough and weigh it down with some lentils. Bake the dough for 15 minutes at 180° C.

Step 4

Remove the lentils. Whisk the egg, milk, cream and grated cheese and season to taste with salt, pepper and nutmeg. Add some ham, onions and spring onions and fill everything onto the baked dough. Cook the quiche for 20 to 30 minutes at 160°C until it is golden brown.

Step 5

Garnish the quiche with crème fraiche, wild herb salad and roasted mushrooms.
