Lemon Curd & Pistachio Cake

For the sponge base:

6 tbsp.
6 tsp.
neutral oil
100 g
150 g
2 tsp.
baking powder
1/2 sachet
lemon sugar

for the topping

200 g
cream cheese
1 glass
lemon curd
1/2 sachet
lemon sugar
100 g
chopped pistachios

Schritt für Schritt - Anleitung

Step 1:

For the sponge base mix all of the ingredients together in a mixing bowl. Spread the finished mixture in the cake base mould and bake until the surface becomes dull. Test with a wooden skewer if needed. The cake is finished if there is no dough residue on the skewer. Baking time: 12-17 minutes Temperature: 170-180 -C

Step 2:

Let the cake cool in the baking mould for 10 minutes before flipping out onto a cooling rack. Once cooled, place the cake base on a cake plate.

Step 3:

For the topping; stir the cream cheese with the lemon sugar until smooth, spread evenly over the sponge base and smooth out. Now carefully spread the lemon curd over the cream cheese (the cream cheese should not mix with the lemon curd!). To finish, garnish the cake with chopped pistachios.
