Ingredients for twelve muffins

For the crumble

90g
flour
50g
sugar
1/2 tsp
cinnamon powder
50g
butter, soft

for the dough

150g
flour
60g
sugar
1 tsp
baking powder
1/2 tsp
sodium bicarbonate
1 pinch
salt
150ml
buttermilk
30ml
oil
1
egg
140g
blueberries, fresh or frozen

Schritt für Schritt - Anleitung

Step 1

Knead all the ingredients for the crumbles and set aside.

Step 2

Mix flour, sugar, baking powder, baking soda and salt in a bowl.

Step 3

Mix buttermilk, oil and egg thoroughly in a second bowl with the hand mixer. Pour the flour mixture over it and fold in everything with a wooden spoon or dough scraper. There may still be slight flour streaks visible in the dough.

Step 4

Carefully fold blueberries into the dough. Spread the dough on 12 muffin cups and place the crumbles on the muffins.

Baking time: 25 minutes
Temperature: 200°C top-/bottomheat

Tip

Add frozen blueberries without defrosting, then the dough will not discolour.
