Mini Strawberry Cheesecakes

Ingredients for 6 cheesecakes

250 g
frozen strawberries
180 g
9 sheets
400 g
cream cheese
150 g
vanilla pod
1/2 package
butter biskuits
50 g
mirror glaze
berries for decoration

Schritt für Schritt - Anleitung

Step 1

Preheat the oven. Melt butter and 50 g sugar in a pot. Crumble the butter biscuits and mix it with the melted butter. Put the mixture in the burger bun form.

Step 2

Bake it for 5 minutes at 180° C and let it cool down afterwards. Then, take the cake base out of the form.

Step 3

Soak 3 sheets of gelatine in cold water. Caramelize 50 g sugar with some water and add the strawberries. Cook to soft and puree the fruits. Now, add the gelatine and fold it in. Divide the mixture evenly into the empty bun forms and freeze the cakes.  

Step 4

Soak 6 sheets of gelatine in water. Stir cream cheese, cream, 80 gram of sugar, one vanilla pod and lemon zests until you have a smooth mixture. Put one or two tablespoons of the mixture in a pot and warm it up. Stir in the gelatine and then add the remaining mixture.

Step 5

Fill the cream cheese mixture into the bun forms on the frozen strawberry jelly. Put the biscuit cake base on top and freeze the cakes.

Step 6

Remove the frozen cheesecakes from the mold and cover them with the mirror glaze.

Step 7

Let the cakes fully defrost and decorate them with some fruits.
