Pumpkin & Spelt Bites

Ingredients for 2 people

200 g
spelt flour (type 630)
50 g
wheat flour (type 550)
125 g
1 tbsp.
cane sugar
1 tsp.
fine sea salt
2 tbsp.
300 g
red kuri squash
150 g
Corn (can)
200 g
1 tbsp.
a little
olive oil
a little

Schritt für Schritt - Anleitung

Step 1:


Add flour, water, margarine, sugar and salt to a mixing bowl and knead it with the dough hook attachment on your hand mixer.

Step 2:

Roll out the dough on a floured work surface until about 1 cm thick, cut into 2 equally sized ovals and place them into the oval baking trays so the dough in each creates a little boat with a 2 cm  high edge.

Step 3:

Peel, core and dice the pumpkin.

Step 4:

Cut the leek into equally thin slices and add it to your non-stick pan along with the corn, some olive oil and salt and pepper for flavour, then fry it all up on a medium heat.

Step 5:

add 4 tbsp. water and 1 tsp. cornflour and let it cook for another 2 minutes. Let the vegetable filling cool and then fill it into the dough boats.


Step 6:

Bake in the oven on the middle tier at 200 - top and bottom heat (180 - fan assisted) for approx. 20 minutes.
