Vanilla Cream Tarte

Ingredients for one tarte

For the dough

400 g
200 g
150 g
powdered sugar
1 package
vanilla sugar
1 pinch of
egg yolks

For the filling

1 liter
egg yolks
250 g
vanilla pod
80 g

For decoration

50 g
pine nuts
2 tbsps.
powdered sugar

Schritt für Schritt - Anleitung

Step 1

First, mix flour, salt and cold butter in a mixing bowl. Then, add sugar, vanilla sugar and egg yolk and mix again. Cover the dough with cling film and let it rest for one hour in the fridge.  

Step 2

Scrape out the vanilla pod and put the it together with milk into a pot. Let the milk boil up and then rest for 10 minutes. 

Whisk egg yolk and sugar in a bowl. While stirring add one third of the milk. Then, add the flour and stir it in. 

Now, put the sugar-egg-flour mixture into the pot with milk and mix the ingredients. Let the mixture cook again for 3 minutes. Cover the cream with cling film and let it cool down in the fridge. 

Step 3

Cover the ground of the mould with two thirds of dough and prick it in with a fork. Then, put the cream into the mould and roll out the remaining dough and cover the cream with it. Again prick it in with a fork. Glaze the cake with milk and sprinkle pine nuts on top.

Bake the cake in the preheated oven at 180° C for 45 to 50 minutes. After cooling down, dust the cake with powdered sugar.
