Bavarian Meat Patty

Ingredients for 6 burgers

For 6 big burger patties

600 g
pork or beef meat
50 g
onions
1 tbsp.
coarse mustard
20 g
mustard seeds
1 tbsp.
parsley

egg yolks
20 ml
white wine
1 tsp
butter

salt and pepper
2 - 3 tbsps.
oil (for roasting)

emmentaler cheese

400 g
pork or beef meat
30 g
onions
2 tbsps.
coarse mustard
10 g
mustard seeds
2 tsps.
parsley

egg yolk
10 ml
white wine
1 tsp.
butter
some
salt and pepper
2 - 3 tbsps.
oil (for roasting)

emmentaler cheese

Schritt für Schritt - Anleitung

Step 1

Cut the onions in small cubes and sear them in butter in a pan. Shortly after add the mustart seeds and sear them until they start to crack. Deglaze with white wine and let it cook shortly. Then, let it drip off in a sieve. Meanwhile, remove tendons from the meat and mince it with the fine insert of the meat mincer.

Step 2

Mix the meat with the onions and remaining ingredients and season with salt and pepper. 

Step 3

Weigh the meat. Use 80 gram for a small patty and 130 gram for a big one. Press the meat with the burger patty press and sear it in a pan from both sides. Then, reduce the heat or finish the cooking in the oven by 160° C for 10 minutes. Alternatively, cook the patties on the grill. 

Tip:

If you like you can grate some cheese over the patty after turning the patties around and let it melt slightly.
