For 6 big burger patties

750 g
duck meat (duck legs)
50 g
bread crumbs
stipes parsley
salt & pepper

For 6 small burger patties

500 g
duck meat (duck legs)
30 g
bread crumbs
stipe parsley
salt & pepper

Schritt für Schritt - Anleitung

Step 1

Remove the skin from the duck leg and put it aside. Then, remove all the tendons from the meat and mince it with the fine insert.

Step 2

Mix the meat with breadcrumbs and season to taste with salt and pepper.


Step 3

Form the meat into patties with the help of the patty maker and sear it from both sides in a pan. Then, reduze the heat or finish cooking in the oven (160°C for 10 minutes).

Alternatively, sear the patties on a grill and finish cooking by reduzing the heat.

Step 4

Place the duck skin between two sheets of baking parchment weight it with a pot and roast it in a pan until it's goldenbrown.
