For 6 big burger buns
- 420 g
- 180 ml
- water (lukewarm)
- 20 g
- 60 g
- potato, in small cubes
- egg yolks
- 1 tsp.
- 2 tsps.
- 3 tbsps.
- 2 tbsps.
Put flour in a mixing bowl, form a hole in the middle and add the yeast.
Also, add sugar and water and let it rest for 15 minutes.
Now, add salt and a large amount of the potato cubes. Knead everything to a dough. While kneading add the egg yolk and one tablespoon oil.
Let the dough rest for 60 minutes covered with a tea towel.
Once the dough has risen, knead it again and form smaller dough balls of 100 gram each.
Press the dough balls slightly flat and put them into the burger bun form. Brush some oil over the buns and cover them with cling film. Let them rest for another 60 minutes.
Brush the dough balls with milk and sprinkle them with the remaining potato cubes. Now bake the buns at 200° C circulating heat for about 15 minutes in the preheated oven.
