Pretzel dough buns

Ingredients for 6 people

For 6 big burger buns

460 g
flour type 550
275 ml
warm water
20 g
fresh yeast
1 teasp.
sugar
2 teasp.
salt
50 g
natron
2 tblsp.
coarse salt

For 6 small burger buns

280 g
flour type 550
165 ml
warm water
10 g
fresh yeast
1/2 teasp.
sugar
1 teasp.
salt
50 g
natron
1 tblsp.
coarse salt

Schritt für Schritt - Anleitung

Step 1

Add some flour into a mixing bowl and form a hole in the middle. Crumble the yeast inside. Add some sugar and warm water and let it rest for 15 minutes. Afterwards, add some salt and knead it to a dough. Let it rest again for 60 minutes. 

Step 2

Knead the dough once again and form small dough balls (70 g/ 110 g). Slightly flatten the balls and let them rise for one hour while covered.

Step 3

Meanwhile, add the natron to 3 litres of water. After their one hour rest, put the dough balls for 15 minutes into the caustic soda solution.

Step 4

At least, take the dough balls out of the natron and put them into the bun form. Sprinkle them with some coarse salt and bake them in the preheated oven for 15 minutes at 190° C.
