Ingredients for 6 burgers

For 6 big burger patties

600 g
meat (pork or calf)
50 g
onions
1 tblsp.
coarse mustard
20 g
mustard seeds
1 tblsp.
parsley

For 6 small burger patties

400 g
meat (pork or calf)
30 g
onions
2 teasp.
coarse mustard
10 g
mustard seeds
2 teasp.
parsley
1
egg yolk
10 ml
white wine
1 teasp.
butter
some
salt & pepper

Schritt für Schritt - Anleitung

Step 1

Cube the onions and sweat them with some butter in a pan. Shortly after add some mustard seeds and sweat until the mustard starts to crack. Deglaze with white wine and let it simmer. Then, let it drain on a sieve. Meanwhile, remove the tendons from the meat and mince it with the fine insert. 

Step 2

Mix the meat and the sweated onions with the remaining ingredients and season to taste with salt and pepper. 

Step 3

Weigh the meat (small patty: 80g and big patty: 130g) and bring it into shape with the help of the hamburger patty press. Now, sear the patties from both sides and finish the cooking by reduzing the heat. Alternatively, sear the patties on a grill.

Tip: If you prefer, you can add some cheese after cooking that side of the patty and let it melt.
