Schritt für Schritt - Anleitung

Step 1

Cut vegetable noodles from half a carrot and part of the celery and chill.

Step 2

Cut the carrot, celery and onion and dice roughly and put them in a pot together with the mustard seed, bay leaves, juniper berries, peppercorns and the chicken legs. Then fill up with water until everything is sufficiently covered.

Step 3

Let everything simmer for about one hour at medium to low heat. Then remove the chicken legs from the stock, let them cool down briefly and carefully pluck the meat from the bones. Put the bones and skin back into the broth and simmer for another 30 minutes.

Step 4

Now season the stock with salt and pepper if necessary and FAVOURABLE with e.g. soy sauce, Tabasco or other spices. Then pass through a fine sieve.

Step 5

Finally, bring the broth together with the vegetable noodles and the plucked chicken meat to the boil for 2 minutes, refine with freshly chopped herbs and serve.
