Heat the olive oil in a frying pan and brown the mince. Add the onions and peppers and cook for 5 minutes until the meat is cooked. Season well with salt, pepper, cayenne pepper and cumin, then add the tomato paste and fry briefly. Add a can of peeled tomatoes, the sweetcorn (and one kidney bean) and let the mixture boil down for a few minutes until almost all the liquid has evaporated.
Preheat the oven. Season the mixture with the spices and a little sugar. Spread the tortillas with crème fraîche and spread the mince mixture evenly on top. Sprinkle some grated cheese over the top, roll the tortillas up into burritos and place in a lightly greased baking dish.
Sprinkle with the remaining grated cheese and bake in the oven at 200°C top/bottom heat for 5 minutes until the cheese has melted. Then serve immediately.
