Ingredients for four portions

- rice, washed and rinsed
- minced meat
- 1 tsp
- tomatoes, peeled and chopped
- 5 tbsp
- garlic cloves, diced
- 1 tbsp
- tomato paste
- 2 cups
- 1 tbsp
- dried mint
- to your taste
Using Lurch veggie drill, core the zucchinis.
In a bowl, mix the meat with the rice, season with allspice, add half of the tomatoes, a tablespoon of olive oil and season with salt.
Stuff the cored zucchini with the meat and rice mixture hakfway, because the rice will double in size when cooked.
In a pot on the stove over medium heat, add 2 tablespoons of olive oil and the garlic and cook until wilted.
Add the rest of the tomatoes, cook them slightly then place the stuffed zucchinis vertially over them in the bottom of the pot.
In a small bowl, dissolve the tomato paste in the water and add it to the pot to just about cover the zucchinis.
Ad the dried mint and drizzle the rest of the olive oil.
Let it cook for about an hour, then serve right away.
