Schritt für Schritt - Anleitung

Step 1

Place bones in sufficiently cold water. When the water boils, add the soup meat and reduce the heat and let it simmer. Add salt, pepper, cinnamon, sugar, aniseed, soy sauce, fish sauce and sweet chili sauce while cooking and simmer.

Step 2

When the soup meat is cooked (fork test) take it out of the broth. Leave to cool, freeze slightly and cut into fine slices. Pass the remaining stock through a sieve and season to taste if necessary.

Step 3

Cook the rice noodles. Cut the carrot into spaghetti with the spiral slicer and fry the sugar snaps briefly.

Step 4

Put the cooked beef slices, rice ribbon noodles, mangetouts and carrot spaghetti in a bowl. Bring the pho to the boil and pour over it while still hot. Garnish with finely chopped spring leek and if necessary finely chopped chilli pepper.
