Schritt für Schritt - Anleitung

Step 1

Cut the red and yellow peppers and aubergine into fine cubes and the red onion into fine strips.

Step 2

Sweat the finely chopped vegetables in 1-2 tablespoons of olive oil. Add tomato paste and fresh herbs and roast briefly. Season with salt, pepper, sugar and chilli.

Step 3

Cut the zucchini with the catto into vegetable strips. Then cut into pieces about 10 cm long.

Step 4

Put a good tablespoon (30-40g mass) of the braised vegetables on each piece and roll it up so that it is about as thick as a finger.

Step 5

Brush each roll lightly with olive oil and sprinkle with finely grated Parmesan cheese.

Step 6

Bake the rolls at 160°C circulating air for about 10 minutes and then serve directly with meat or fish as a side dish.
