Step 1

First, wash the lemons thoroughly and put them into a pot. Then, cover the lemons with water and cook them at medium heat for 45 to 60 minutes until they have a very soft consistency. 

Step 2

Weigh the lemons after cooking and add the same amount of sugar. Example: After cooking the lemon weighs 167 g, so you add 167 g of sugar.

Step 3

Now, puree the lemons finely and press them through a sieve. Season them to taste with some salt. 

 

Tip:

The lemon curd might concentrate when cooling down but can be loosened again by vigorous stirring. You can also try this recipe with other citrus fruits and without salt.
