Steak with green asparagus and tomato butter

beef steak
8 spears
green asparagus
1/2
lemon
120 g
butter
1 tbsp
tomato paste
to taste
salt, pepper, sugar

chili, herbs

cherry tomatoes, in half

Schritt für Schritt - Anleitung

Step 1

Whip 100g of butter with a tablespoon of tomato paste and a little salt, pepper and sugar. If necessary, add some chilli or herbs to taste.

Step 2

Cut one steak into pieces and season roughly. Cut the green asparagus spears in half. 

Step 3

Sear the steak on both sides and then finish cooking in the oven. Alternatively, cook on the grill as desired.

Step 4

While the steak is cooking, sear the asparagus in the pan. After a minute or two, deglaze with the remaining butter and lemon juice, add the cherry tomatoes and season with salt and pepper.

Step 5

When the steak is cooked, serve with the green asparagus and tomato butter.
