Sweet potato-pancakes with creamy tomato-salmon-salad

500 g
sweet potatoes
50 g
1 tsp each
paprikapowder, curry, salt, pepper, garlic

cardamom, cumin

Ingredients for the salad

200 g
Creme fraîche
250 g
cherry tomatoes
100 g
smoked salmon
lemon, juice and zest
10 - 15 g
fresh basil
to taste
salt, pepper, chili

Schritt für Schritt - Anleitung

Step 1

Peel sweet potatoes and grate over a coarse grater. Place in a bowl together with the spices and knead intensively.

Step 2

Drain the resulting juice and then add eggs and cornstarch. Mix everything well.

Step 3

Using your hands or a spoon, remove small portions, place in a preheated pan and flatten slightly. Fry over medium heat until golden brown on both sides.

Step 4

Finely chop smoked salmon and basil. Halve the cherry tomatoes. Mix everything together with the crème fraîche and lemon juice and zest, then season to taste.

Step 5

Arrange the pancakes together with the salad and serve immediately or let everything cool and pack to go.
