Sweet Potato-Spinach-Feta Rolls

small onion (about 50g)

Schritt für Schritt - Anleitung

Step 1

Finely chop the onion and garlic and sauté in butter until translucent.

Step 2

Add leaf spinach (frozen or fresh) and deglaze with white wine. Then add the cream and let it boil down a little.

Step 3

Add breadcrumbs and season with salt, pepper and nutmeg. Then put to the edge and let cool slightly.

Step 4

Cut the feta into sticks about the thickness of a finger and cut the sweet potato with the catto into vegetable strips.

Step 5

Cut the vegetable strips into pieces about 10-15cm long and spread them with spinach about 5mm thick. Then place a piece of feta cheese on top and roll up. Make sure that a piece of the vegetable strips overlaps and that the roll closes well.

Step 6

Brush each roll with a little olive oil and sprinkle with chopped pumpkin seeds and the finely chopped remains of feta. Bake in the oven at 180°C circulating air for 10 minutes and serve immediately.
