Vegetable Fritter with fresh cheese and herbs

For the quark

250 g
Quark (40%)
1 pinch
salt, pepper
1 bunch

For the sponge:

1000 g
thick carrots
1 pinch
1 pinch
1 pinch
3 tbsp.

Schritt für Schritt - Anleitung

Step 1:

Peel the potatoes and carrots and then make spirals using a fine blade. Blanch them in boiling water for approx. 1 minute, then strain them and let them cool.

Step 2:

Pepper the fresh cheese and salt if desired. Cut the chives into fine rings and mix them into the fresh cheese. Lay a couple of chives to one side to use as a garnish later.

Step 3:

Whisk the eggs and season them with salt, pepper and a pinch of nutmeg. Mix the egg well into the potato and carrot spirals. Use a fork to twist out the fritters and cook them in a pan with hot oil. As the oil needs to be very hot, it is best to use lard or oil to cook them. Push the fritters flat while they cook.

Step 4:

Remove the spiral fritters from the pan and if they are too oily, then simply let them drip onto some kitchen roll. If you want to keep the fritters warm for longer, then simply place them in the oven at 100 -C. Otherwise, simply serve immediately along with the seasoned fresh cheese and several chives.


These vegetable fritters can also be enjoyed in a sweet capacity, e.g. with apple sauce or marmalade. Cucumber salad nests with smoked salmon also work well with the potato dish.
