For the basil syrup
- large bunch(s) of basil with stem
- 6 cl
- basil syrup
- 2 cl
- lemon juice
- 18 cl
- soda water
- fresh basil
- 20x20mm ice cubes
Pot, sieve, fine sieve or passing cloth, bowl, blender or electric mixer, sealable bottle
Blanch basil. Bring all ingredients to the boil in a pot. Puree in an electric mixer or with a blender and bring to the boil again. Pour through fine sieve or passing cloth, fill into a closable bottle and allow to cool.
Fill glass with 20x20mm Ice cubes.
Add soda water to the syrup and stir.
Beat basil in the hand and garnish
