Schritt für Schritt - Anleitung

Step 1:

Pour - l of boiling water over the flaxseeds, cover and let them soak for approx. 1 hour.

Step 2:

To create the pre-ferment, place both types of flour into a large mixing bowl and create a well. Crumble your yeast into the well and drizzle the honey over it. Next, add the soaked, lukewarm flaxseeds into the well. Then stir the yeast, honey and some of the flour from the sides of the well together. Cover the bowl with a towel and let it prove for 15 minutes.

Step 3:

Sprinkle some salt over the dough and place the entire contents of the mixing bowl into a mixer to knead. Leave the dough to rest for a further 15 minutes. After that, knead it thoroughly again until the dough is smooth and doesn't stick to the bowl. Place the dough into the baking mould and let it prove for another 15 minutes until it is approx. 1/3 bigger in size. Slit the surface diagonally with a knife. Bake the bread in the bottom of the oven at approx. 200 °C (fan assisted 180 °C) for 70 minutes. (Fill an oven-proof cup with water and place it into the oven as well.) Baking time: 70 minutes temperature: 200 °C top and bottom heat
