Preparation
Prepare the cake

Preheat the oven to 180°C convection oven. Separate the eggs and refrigerate the egg whites.

Whisk the egg yolks with the sugar, vanilla sugar and water for several minutes until a fluffy but firm cream forms.

Add the salt to the egg whites and beat until firm. Gently fold this into the egg yolk cream.

Combine the flour, baking powder and cornflour, sift and then gently fold into the beaten egg whites.

Divide the batter between the moulds so that they are all evenly filled and bake the batter: The 20 cm tin for 40 minutes, the 15 cm tin for 25 minutes and the 9 cm tin for 15 minutes.

After baking, cool the cake bases briefly in the tins and then leave to cool on a rack before further processing.
