For the sauce

250 g bacon
1 onion
3 Tablespoon(s) brown sugar
1 kg apricots
500 ml apple juice
2 Tablespoon(s) apple cider vinegar
5 Tablespoon(s) honey
1 Teaspoon(s) salt
chili (optional)

Preparing the sauce

Put bacon cubes without oil in a pot and heat it first. Cut apricots in half and remove seeds.

Cut one onion into cubes and add to the bacon.

When bacon and onions are lightly frying, add brown sugar (and chilies to taste, if desired) and caramelize briefly.

After a short time, add the apricots and sauté. Then deglaze with apple juice.

Allow everything to reduce for about 60 minutes over medium heat, then season with vinegar, honey and salt.

Finally, let the sauce cool down a bit and blend it finely in a multi chopper. Then bottle/serve.
