Asparagus feta pea strudel

Description
Green asparagus is actually a very noble vegetable that should be presented on the plate. The only exception - if you "hide" it - is if you roll it up together with sweet peas and creamy feta in incredibly crispy strudel dough. Super tasty, nice and crispy, as a side dish or just as a snack!

5 strudel dough sheets
170 g green asparagus
100 g peas
100 g feta cheese
100 g cream cheese
2 Tablespoon(s) fresh mint, chopped
75 g melted butter
salt, pepper

Prepare the filling

Bring the water to the boil with plenty of salt and blanch the peas in it.

Meanwhile, wash the asparagus and then cut into thin slices. Sauté them briefly in a pan. Tip: You can also use (white) asparagus from the day before instead. The only important thing is that it is already cooked.

Mash the feta in a bowl with a fork and then mix with the cream cheese. Add the asparagus, peas and mint, season with salt and pepper and mix again.

Prepare the strudel

Preheat the oven to 180°C fan oven. Cut the strudel sheets in half to make two sheets about the size of a normal sheet of paper.

Lay out the first sheet on edge and brush thinly with melted butter. Place the second sheet on top and also brush thinly with butter.

Spread not quite 100g of the filling two to three fingers' width above the bottom edge. Fold the bottom edge of the pastry over the filling and then fold the long sides inwards over the filling. Now roll the strudel upwards. Tip: The strudel should not be rolled up too tightly, otherwise it may burst during baking.

Do the same with the remaining strudel sheets and the filling and then place the strudel on a baking tray lined with baking paper. Brush each strudel with a little melted butter and then bake in the preheated oven for 20 minutes until golden brown.
