Asparagus ham rolls with mustard crust

Asparagus and ham rolls - isn't that THE party hit from the 70s? Of course it is! And if it was so delicious back then, it's certainly just as good today! We simply add a mustard crust to this little delicacy and are sure that it will become even more popular.

For the asparagus

1 Splash(es) lemon juice

For the mustard crust

50 g butter
20 g onion
70 g coarse mustard
30 g fine mustard
100 g breadcrumbs
salt, pepper, sugar

Prepare the apsaragus

Wash and peel the asparagus and break off the woody ends. Place the sections (asparagus skin and woody ends) in a small pan and cover with water. Add the butter, lemon juice, salt and sugar and simmer for about 30 minutes.

Blanch the asparagus spears in the freshly boiled asparagus stock for about 5 minutes.

Cut the slices of cooked ham in half down the centre and then roll each blanched asparagus spear in half a slice of ham and place in an ovenproof casserole dish.

Prepare the mustard crust

Preheat the oven to 180°C fan. Melt the butter in a pan. Meanwhile, finely dice the onion and add to the butter.

When the onions have sautéed until translucent, add the coarse and fine mustard and fry briefly.

Remove the pan from the heat and add the breadcrumbs, a little salt and pepper and a pinch of sugar and knead everything into a smooth mixture.

Spread the mustard crust evenly over the asparagus and ham rolls and bake in the preheated oven for 20 minutes. Tip: If the crust is not "crispy" enough afterwards, you can briefly use the top heat/grill function of the oven to help. But be careful: the crust can quickly become too dark.

Potatoes and a sauce of your choice are ideal as a side dish.
