Baked apple in pastry coat

Description
When it gets cold and uncomfortable outside, it's the right time to relax in the warmth of your home. A delicious baked apple is just the thing. It's not only the smell when it comes out of the warm oven that is tempting. Filled with a sweet mixture, it tastes simply heavenly. But that's not all! The whole thing is wrapped in puff pastry, which makes the apple wonderfully crispy on the outside. Soooo delicious!

For the baked apple

4 apples, medium size
4 Piece(s) puff pastry, frozen
150 g quark
2 Tablespoon(s) almonds, chopped
2 Tablespoon(s) figs, dried and chopped
2 egg yolks
2 Tablespoon(s) sugar
100 g marzipan
4 Teaspoon(s) quince jelly
juice of a small lemon
vanilla sauce (optional)

Prepare the apples

Defrost the puff pastry, preheat the oven to 150°C convection air.

Hollow out the apples with a twister (medium size).

Whisk the lemon juice with the jelly, sugar and marzipan. Mix the mixture with the curd and the egg yolk and lastly fold in the chopped almonds and figs.

Press the filling into the apples with a spoon.

Place one piece of puff pastry around each apple like a mantle and press together a bit.

Bake the apples for 30 minutes.

Tip: Serve the baked apples hot. The dish goes well with vanilla sauce (or vanilla ice cream).
