21 g yeast, fresh
425 g wheat flour, type 550
1.5 Teaspoon(s) salt
4 Tablespoon(s) milk
250 ml water, lukewarm
flour for working
1 Teaspoon(s) sugar

Bake the bread

Put the flour in a mixing bowl and crumble in the fresh yeast. Add the sugar and fill up with water. Wait 15 minutes.

Add the sea salt and knead everything into a smooth dough. Then leave to rise for an hour.

Remove the dough from the bowl and knead briefly on a floured work surface and place in the loaf tin. Leave to rise again for an hour, or until the tin is filled to just below the rim. Preheat the oven to 200°C top/bottom heat.

Cut the surface of the dough diagonally with a sharp knife and brush with milk.

Bake in the preheated oven on the bottom shelf for 45 minutes. Leave to cool completely after baking.
